Vintage meat chart showing the various cuts of lamb offered by Wilson & Co., Chicago. the company began its life as Schwartzchild & Sulzberger, a New York slaughterhouse, in the 1850s. However, after rapidly expanding to other US cities starting in in 1893, the company found itself in dire financial straits until it was bought out by Thomas E. Wilson in 1916 who moved operations to Chicago's Union Stockyards and renamed it Wilson & Co. It remained a fixture in the Chicago meat packing industry until 1967 when it was sold off to Ling-Temco-Vought who moved its headquarters to Dallas and slowly sold off smaller portions of the company until the brand was no more.

A few items from its brief history can still be seen to this day, such as this poster chart, and are sought after by Chicago historical collectors.
